Chicken Stir-Fry

Ingredients
  • 1/4 C. pre-sliced Hormel 100% natural grilled chicken breast
  • 1/2 C. Bobs mill brown rice
  • 2 peppers from Walgreens stoplight colored peppers, chopped
  • 1 onion from Walgreens onion medley, chopped
  • 1/2 pkg brussel sprouts or 1/2 C. broccoli
  • 1 box pre-cooked edamame
  • 1/2 bag sugar snap peas
  • 1 T. olive oil
  • 1 t. soy sauce

Directions

Cook rice.  Add 1 T olive oil to pan or wok and heat on medium-high heat.  Once the pan is hot, add onions, peppers, sprouts, snap peas and edamame.  When vegetables are heated through, add chicken. Once chicken is heated, add soy sauce, stir mixture and remove from heat.  Serve stir-fry over rice.
