Savory Mustard Potatoes

Ingredients
  • 2 lbs red potatoes, cut into large chunks
  • 6 T dijon mustard
  • 1 clove garlic, minced
  • 1 T fresh rosemary, chopped
  • 2 T. olive oil
  • 1 T dry vermouth

Directions

(Serves 8) Heat oven to 350.  In a large bowl, toss together red potatoes, dijon mustard, garlic, rosemary, olive oil, dry vermouth, course salt and freshly ground pepper to taste.  Spread on a large baking sheet.  Bake about 1 hour, occasionally tossing potatoes with spatula, until the crust is deep brown.  Serve immediately.
