Shrimp and Sugar Snap Peas in Curried Coconut Sauce

Ingredients
  • 1 T. butter
  • 1 1/2 lbs medium or large shrimp, uncoooked, cleaned and deveined
  • 1/2 lb sugar snap peas or snow peas
  • 2 t. curry powder
  • 1/4 t. garlic powder
  • 1/2 t. course salt
  • 1 (13.44 oz) can light coconut milk
  • 2 T. white wine
  • 2 t. fresh lime juice
  • 1 T. cornstarch
  • 3 green onions, sliced

Directions

Makes 4 servingsMelt butter in large skillet on medium-high.  Add shrimp and peas; sprinkle with curry/garlic powder/salt.  Cook and stir 5 minutes or until shrimp begins to turn pink.  Stir coconut milk, wine & lime juice into cornstarch until it becomes smooth.  Add to shrimp mixture.  Bring to boil on medium heat 2 minutes, stirring constantly.  Sprinkle with onions.
