Sausage & Quinoa One Pot Supper

Ingredients
  • 12 oz Polish or Turkey Kielbasa - cut into 1/2" cubes
  • 1 yellow onion, chopped
  • 2 T sage, chopped fine
  • 1 C. organic apple or pear hard cider
  • 1/2 C. dried cranberries
  • 1 t fine sea salt
  • 1 1/2 C spinach or kale, chopped
  • 1 C. quinoa (cook according to package directions)

Directions

In a large pot, cook sausage, onions and sage over medium-high heat until just browned, about 10 minutes. Add cider, pre-cooked quinoa, cranberries, salt   Stir in kale, cover and set aside off of the heat for 5 minutes. Uncover, fluff with a fork and serve.Notes: When cooking the quinoa, I use half water/half chicken brothThe hard cider is an alchoholic beverage - (good to know BEFORE you tell your kids it's okay to drink!)
