Gruyere and Goat Cheese Frittata

Ingredients
  • 1 T olive oil
  • 1 medium onion, chopped (about 1 cup)
  • 1/2 t. salt
  • 1/2 t pepper
  • 1 pound spinach leaves, washed and chopped
  • 1 T. water
  • 9 large organic eggs, beaten
  • 3 oz goat cheese, crumbled
  • 1/4 cup grated Gruyere cheese

Directions

Preheat oven to 400.In an ovenproof skillet over medium-high heat, add the oil and heat until hot.  Add the onions, salt, and pepper.  Cook 3 to 4 minutes while stirring occasionally, until the onions are translucent.  Add the spinach and water and cook, while mixing, until the spinach is wilted (about 1 to 2 minutes).  Pour in the eggs and sprinkle on the cheeses.  Cook 1 to 2 minutes, until the mixture begins to set, 10 to 12 minutes.Remove from the oven and serve.Change up the frittata by using different types of cheese, leafy greens, and vegetables.
