|Gruyere and Goat Cheese Frittata|
DirectionsPreheat oven to 400.In an ovenproof skillet over medium-high heat, add the oil and heat until hot. Add the onions, salt, and pepper. Cook 3 to 4 minutes while stirring occasionally, until the onions are translucent. Add the spinach and water and cook, while mixing, until the spinach is wilted (about 1 to 2 minutes). Pour in the eggs and sprinkle on the cheeses. Cook 1 to 2 minutes, until the mixture begins to set, 10 to 12 minutes.Remove from the oven and serve.Change up the frittata by using different types of cheese, leafy greens, and vegetables.
