DirectionsFrom "Grain Brain".... Here's a dip that's a mix between guacamole and hummus. Try it with pre-cut raw veggies or pre-cooked cubed chicken. Cook the arugula in the olive oil in a large skillet or saucepan over medium-high heat until wilted. Add the arugula to a food processor with the other ingredients and process until smooth. Add 1/4 C. water or more and process until the mixture is a medium-thick consistency. Serve immediately or store in an airtight container in the refrigerator for up to two days.
