Hummus

Ingredients
  • 2 C. canned chickpeas, drained (reserve liquid)
  • 1/4 C. tahini
  • 1 t. ground cumin
  • 1/3 C. lemon juice
  • 2 T. EVOO
  • 2 garlic cloves, crushed
  • sea salt to taste

Directions

Drain the beans and reserve liquid.  Blend beans in a food processor with remaining ingredients.  If mixture seems dry, add some of the reserved liquid slowly to the blender to make a smooth paste.  Chill for several hours before serving.
